Recipe - Porcupine Casserole

This recipe is from Simply Too Good To Be True - Book 3.
It's a good basic dinner that doesn't require a lot of effort.  It's a good one to sneak extra vegetables in.  I often put carrot, celery, zucchini and/or broccoli into the food processor and add to this type of sauce.  The sauce would be a bit thicker so you'd have to watch if it needed more water.

Serves 4

INGREDIENTS
Sauce
1 can tomato soup (420g)
1 can crushed tomatoes (420g)
½ cup finely diced onion
1 cup water
2 tsp chicken stock powder
1 tsp dried oregano
1 tsp garlic (in jar)
Meat balls
500g lean beef
1/3 cup raw long grain rice, raw
1 tsp chicken stock powder
1 egg white

METHOD
Sauce
Combine all ingredients and pour into large casserole dish
Meat balls
Combine all ingredients in a large bowl and shape into about 12 round balls.
Add them to the sauce in the casserole dish.
Bake for 1 hour @ 190 degrees.
Serve with mashed potato.
