This is another recipe that came from one of the women in my quilting group. We had this for dinner tonight and thought we should remember it for when we're narrowboating. The original recipe is for meatloaf but we make the meat mixture into "burgers" and bake them in the oven the same way. We've also reduced the amount of sugar from the original recipe. Serves 4.
Meatloaf Ingredients
500g premium beef mince (or 50/50 with sausage meat as per the original recipe)
1 onion, finely diced
1 tbsp curry powder
1/2 cup dried breadcrumbs
1/4 cup tomato sauce
1 egg (we use 2 of our little bantam eggs)
Salt & pepper
Method
Preheat oven to 180 degrees. Mix ingredients together and make into 8 patties. Spray a shallow pan and place patties into pan. Bake for 30 minutes then pour off excess juices. Pour the glaze over the patties and return to oven for another 10 minutes.
Glaze
125g canned tomato soup
2 tbsp brown sugar
2 tbsp white sugar
2 tsp curry powder
1 tbsp soy sauce
1 tbsp Worcestershire sauce
Salt & pepper
Combine ingredients into a small saucepan and bring slowly to the boil. Pour over patties.
