Now, here's one I haven't even made yet. I'm a fan of Thai food and somebody scrawled this recipe on a piece of paper for me a while ago. I was cleaning out the cupboard and found it. I don't want to forget about it but it's not a Summer dish so it will have to wait.
I'm thinking that I'd cook the pumpkin to soften it, and probably cook the onion first before adding the other ingredients.
If anybody makes it, can you let me know what you think?
Ingredients
375ml evaporated milk
2 tsp cornflour
2 tbsp red curry paste
2 tbsp fish sauce
1kg diced pumpkin
1 diced onion
2 tbsp chopped coriander
Method
Cook slowly (except coriander).
Mash before serving.
Add coriander to serve.
